The Tommy Atkins is the most common mango found in US supermarkets because they have a good shelf life and are resistant to disease. While it gets a bad rap as being somewhat bland, it is primarily due to most imported mangoes (and most produce for that matter) being harvested prematurely without the flavor having fully developed. If you want to taste mango heaven, go to South America and pick up a ripe Tommy Atkins that naturally fell off the tree. It is juicy, and the flesh is firm (not mushy like many other varieties). The taste is crisp and piquant with a balanced sweetness. And a bonus, the Tommy has less of the annoying fibers that get stuck in your teeth.
The Sugar Mango is a small, Colombian variety that has a much lower fiber content than the normal mango, but much higher in natural sugar content. It is quite a treat when eaten fresh. For industrial use, it’s perfect when paired with a crisper and milder fruit (such as the Tommy Atkins) to balance its natural sweetness.

Shelf Life: 18 month from the date of manufacture as long as packaging remains unopened. Store away from sunlight and below 77° F. Once opened, they can be refrigerated for up to 10 days, or frozen for the remainder of the shelf-life.
