What are some ways I can use fruit for cheesecake?

Making a compote is super easy and unbelievably tasty! You simply reduce the puree and sugar on the stove until it reaches your desired thickness. You can also add chunks of fruit if desired, or keep it smooth. Add a bit of cornstarch if you want a thicker sauce.

Besides making fruit toppings, you can add fruit purees to the batter to infuse the finished cake with fruity flavor. Try swirling your compote into the batter to give it a fancy, marbled look!

Do I need to keep my fruit puree in the fridge or freezer?

Unopened, our triple-barrier aseptic packaging will keep your fruit for cheesecake fresh for 18 months from the date of manufacture with no freezing or refrigeration needed. Store it below 77° F and away from direct sunlight.

After the package has been opened, store it in the refrigerator for up to 10 days or in the freezer for the remainder of its shelf life.

What’s the best fruit puree for cheesecake?

You can’t go wrong with a berry puree like cherry, strawberry, blueberry, or raspberry. If you want to get a little more creative, consider a citrus puree like Tahiti lime puree or blood orange puree. Tropical purees are wonderful with cheesecake, too.
