While the rinds and flesh can come in many colors and textures, the light green rind with vibrant pink flesh is the most well-known. Although watermelons are most closely associated with summer, they’re imported and exported year-round.

A watermelon’s flavor profile is typically fresh, fruity, green, sweet, and delicate with notes of tropical fruit and cucumber. Watermelon flavor is typically used on its own due to its signature taste, but it does pair quite well with a variety of other fruit purees, such as berry puree, orange puree, mango puree, and pineapple puree.
