Cape Gooseberry

Called the “Fruits of Love” in Peru, the Cape Gooseberries as you may know them, are small, round, bright yellow fruits that are encased in delicate paper-like husks. It’s native to South America, but is now grown in many parts of the world. Each fruit is the size of a cherry tomato and is bright yellow to orange in color. While there is a hint of tomato, the flavor is quite distinct, like a tart yet sweet-tomato-like flavor with fruity and candy-like notes.

A common staple in the culinary world, commonly used in chutneys, sauces, and as garnishes for savory dishes. More recently, it’s being used in cocktail mixology, and other fermented beverages like kombucha and beer. Like most of the exotic fruits, it’s one of those you just have to try because its taste is so unique.

Cape Gooseberry Aseptic Puree Specifications

Scientific name: Physalis peruviana

Otherwise known as: Goldenberry, uchuva, gooseberry, ground cherry, Peruvian cherry

Flavor Profile: Tart and sweet, with notes of tomato, pineapple, apricot, and tangerine

Pulp Color: Bright yellow orange

Ingredients:  Cape Gooseberry puree, ascorbic acid (Vitamin C)

Shelf Life:  18 month from the date of manufacture as long as packaging remains unopened. Store away from sunlight and below 77° F.  Once opened, they can be refrigerated for up to 10 days, or frozen for the remainder of the shelf-life.

Beverage Uses: homebrewing, microbrewing, nanobrewing, craft brewing, fruited beers, fruited sours, cocktails, juices, seltzers, ciders, kombucha, mead, tea

Food Uses: baking pastries, ice cream, gelatos, sorbets, frozen desserts, yogurt, sauces, preserves
