Better Than Ordinary Dried Banana Slices

Bananas are grown in tropical regions of Africa, Asia, and Latin America, and their slices retain their original yellow color when freeze-dried. After drying, they develop a crunch that’s satisfying and sweet, with creamy notes of caramel, brown sugar, and vanilla. These characteristics, which add flavor and texture, make them ideal for use in snacks, energy bars, smoothies, cereals, frozen treats, baked goods, and countless other drinks, snacks, and dishes.

Bananas keep approximately 90% of their nutritional value through the freeze-drying process. In contrast to normal dried bananas that use heat to remove moisture, freeze-dried bananas are made by removing the water in a vacuum chamber. This method retains more of the banana’s vitamins and minerals, including vitamin B6 and potassium. It also provides a snappier texture and more of a natural banana flavor.

Should I choose freeze-dried or heat-dried bananas for my recipe?

Unless the recipe specifically calls for heat-dried bananas, we highly recommend freeze-dried bananas. Heat-dried bananas often have an unpleasant leathery texture, and the flavor tends to be cloyingly sweet with a closer resemblance to banana-flavored candies than actual bananas. Freeze-dried fruits are also more nutritious than heat-dried fruits.

How do I rehydrate freeze-dried bananas?

Rehydrating freeze-dried fruit is as easy as soaking them in water for a few minutes until they’re soft. Three parts water to one part bananas is an ideal ratio.

Can I use dried bananas for brewing craft beers?

Yes, dried bananas are perfect for creating complex flavors in craft brews. They work particularly well in dark ales and stouts, enhancing the creamy richness. Freeze-dried banana slices are typically added during secondary fermentation or dry hopping. Note that the fruit’s natural sugars can increase the gravity of your brews, so plan accordingly.
